    Marquis a cross between Red Fife and Red Calcutta, developed in Canada in 1906. It accounted for 11 million acres of wheat grown in the U.S. by 1919.

    This hard red wheat has a similar flavor profile to Red Fife, but milder, and makes a stronger and most extensible dough. Learn more about it in this video.

      Sandwich Loaf

      We have just begun serious baking and, wanting to use only heritage grains, this was the flour that we used for our sandwich loaf. We also used the Barton Springs Mill recipe from the online video. It came out perfect! Excellent crust and crumb, no digestion issues, and oh so delicious! This will be our go-to flour and sandwich loaf recipe from now on.
