Sprouted Einkorn Berries
Boost the nutrition and flavor in your next meal prep by adding sprouted wheat berries to the mix! Great to toss in salads, cereal, oatmeal, or various baked goods. Sprouted wheat berries aid in digestion by allowing the vitamins, minerals, and proteins to become more readily available. Substitute any wheat berry variety you wish in this recipe!

Yield: 1 cup sprouted berries
Ingredients:
1 cup wheat berries (BSM Einkorn wheat berries used here)
4 cups water
Method:
In a large bowl combine the wheat berries and warm water. Swirl around the wheat berries with your hand for a few minutes to ensure the wheat berries are fully saturated. Strain, then place over a paper-towel or kitchen towel lined sheet tray. Cover with an additional towel and store
overnight in a cool, shaded area of your kitchen. Repeat this process over the course of 3-4 days until the wheat berry sprouts have emerged. Once sprouted, store in an airtight container in
the fridge for up to a week.
Sprinkle over salads, cereal, porridge or anything you wish! These can be folded into a bread dough, scones, muffins, pancakes you name it. Get creative with the endless possibilities of sprouted wheat berry nutrition!
