    A dessert that tastes like summer. Our BSM Test Kitchen strawberry cornmeal crumble uses both our organic Bloody Butcher cornmeal and All-Purpose flour for one easy yet truly satisfying summer treat. Serve with a generous amount of ice cream of course!

    Strawberry Cornmeal Crumble 

    Yield: 9x12 casserole dish; 8-10 servings  

    Ingredients:

    Crumble:

    140g BSM cornmeal (any variety)

    100g BSM Standard All-Purpose flour

    150g cane sugar

    150g light brown sugar

    zest of one large lemon

    170g unsalted butter (melted)

    5g baking powder

    4g fine sea salt

    Unsalted butter (softened, for dish)

     

    Filling:

    2lbs fresh strawberries (quartered)

    85g cane sugar

    20g corn-starch          

    zest of one large lemon and juice

    moderate splash red wine vinegar

    pinch of sea salt

     

    Method:

     

    Preheat an oven to 350°F.

     

    In a large mixing bowl, add the rinsed and quartered strawberries. Add the sugar, lemon zest, lemon juice, red wine vinegar, and salt. Stir just enough to incorporate. Sprinkle the cornstarch over the mixture, and fold once more until the cornstarch is incorporated. Set the filling aside.

     

    In another large mixing bowl, combine the cornmeal, flour, both sugars, baking powder, and salt. Whisk the dry ingredients together. Melt the butter, and pour over the dry ingredients. Using your hand or a spatula, mix the ingredients into a shaggy crumble.

     

    Spread soft butter moderately into the bottom of the casserole dish. Pour the fruit into the dish and spread evenly. Sprinkle the crumble evenly over the top of the fruit. Add small blueberry sized dabs of cold or semi-soft butter, about two tablespoons worth in total, across the top of the crumble. Bake for 50 min to 1hr. The fruit juices should have a slow bubbling look and it should look as if the fruit filling has “jelled”.

    Serve warm and with plenty of vanilla ice cream for an early summer or (any time of year) treat! Get creative by using other fruits throughout the different seasons!
