    Whole Wheat Country Sourdough

    BSM has partnered with Oklahoma State University's Dr. Brett Carver and Bob Baker of 4 Generations Farm, Alva, Oklahoma, to bring you Heartwell - a modern purple wheat developed from the crossing of Big Country (a former BSM customer favorite) and Smith's Gold. The result is a wheat with purple pericarp/bran that contains at least three times the antioxidant anthocyanin found in conventional wheat, comparable with the concentrations found in blackberries. Additionally, Heartwell has a strong, rich flavor profile and aroma, with baking properties that match or exceed Butler's Gold! Barton Springs Mill was selected as the only mill to produce limited amounts of this wheat into whole wheat flour. While supplies last.

      Hearty whole-grain flavor

      I am a brown-bread afficionado, and Heartwell Purple Wheat is right there. It has the robust wheat taste that I like, with no bitter overtones (naturally, no BSM whole wheat variety is EVER bitter).

      First Loaf of Heartwell Bread

      I finally found time to try the Heartwell flour from Barton Springs Mill and I was really impressed with this flour. I used my standard recipe for fresh milled flour and let it hydrate for an hour before adding the yeast. I also used Vital wheat gluten flour to help make a nice loaf and crust. The results were a really fragrant and delicious loaf of bread. This will be one of my favorite flours to use from Barton Springs Mill.
