I usually start by substituting a third of the flour called for in the recipe, and work my way up until it feels just right for my family. Little kids don’t like big changes in their favorite treats, but with this method they only notice the better taste.

I used this flour to make whole wheat pasta. The flavor was delicious and the wheat itself quite light. I had no need to cut the whole wheat with all purpose.

The Mediterranean flour is fantastic for flatbread and a very nice addition in pizza dough.
