Have you ever wanted to learn how to make the quintessential 18th century Viennese Apple Strudel pastry? Here is your opportunity! Led by Baker and former BSM Recipe Developer Pamela Thibodeaux, students will work in pairs and learn how to make this traditional and long time European favorite from start to finish.
We'll partner up in class and together make the classic dough and learn the proper rolling and stretching techniques that make this dish unique. We'll prepare the apple-raisin filling and discover the strategic assembly that creates those delicate paper thin layers. By the end of class, each student will have their very own crispy apple strudel to share with loved ones.
BYOB is fine by us for participants 21+ 🥂
Things to look forward to:
A little bit about your instructor:
Professional baker and Cake Artist Pamela Thibodeaux has been baking for over the last decade in various Texas bakeries, such as Sour Duck and Abby Jane Bakeshop. Pamela was also our resident Recipe Developer here at Barton Springs Mill for the last three years. After graduating with a Bachelor of Science in Hospitality Management and Culinary from the University of North Texas, Pamela’s journey led her to pursuing artisan baking, in which she has been using our stone milled flours since the very early milling days. Pamela established her cottage cake studio known as Deaux Baker in 2022 here in Central Texas. Here she creates whimsical and sculptural cakes sourcing our stone milled flours, seasonal ingredients, and local non-toxic florals from various farms. Her work has been featured in national wedding publications such as The Knot and The Wed, as well as Austin’s local cultural publication Tribeza Magazine.
