Butler's Gold is a modern wheat with high strength that performs very well in pizza doughs and breads.
It is my most reliable of all of the berries that I have tried and has a wonderful flavor!!
I absolutely love all the different kinds of berries I’ve purchased from Barton Springs, but Butler’s Gold is one I always keep on hand now. It’s just a fantastic staple and the quality is so so good!
I love milling my own wheat berries. So fresh but indeed (for me) harder to work with bc im too attached to recipes.
Rouge de Bordeaux is my favorite for bread, but Butler’s Gold is right behind it. Those along with Stardust for a hard white pretty much do it all for me. All are superb!
I’m using this wheat with Sonora to make my pizza dough! It’s fantastic! I didn’t want the flavor of the wheat to overpower the flavors going on the pizza! It’s a winner!!! Great strength and flexibility!!!
