      My Favorite Wheat

I've been baking a long time and I've tried lots of different wheat berries (I have a Mockmill grain mill). The Barton Springs Mill Rouge de Bordeaux is a real favorite - deep, slightly spicy flavor and it bakes up in bread beautifully. And the berries were nice & clean to boot!

      So good!!

This was one of my first experiences with grinding my own flour at home and it’s been a game changer in my opinion. The complexity of flavor with the hint of spice is so good. It’s quickly become my favorite flour for my sourdough.
