Rouge de Bordeaux Whole Wheat: This 19th century bread flour was the favorite of French bakers for generations. Breads from Rouge de Bordeaux have a rich, nutty flavor with aromas of cinnamon and baking spice. It is a hard red wheat and can be used as bread flour in any recipe.
Marquis '00': Marquis a cross between Red Fife and Red Calcutta, developed in Canada in 1906. It accounted for 11 million acres of wheat grown in the U.S. by 1919. It is a hard red wheat and can be used as bread flour in any recipe.
Mediterranean Whole Wheat: A Barton Springs Mill Exclusive. This Colonial Era wheat hasn’t been tasted in over 50 years and we’ve worked hard to revive it for you! This soft wheat is a go-to for delicate pastries, muffins, cakes, and enriched breads.
Sonora '00': Quite possibly the most beloved flour of our BSM staff. Sonora is one of the oldest surviving wheat varieties anywhere in North America. Predating Red Fife and Turkey Red wheat, it is a soft white winter wheat with pale red grains. Its is a staple flour for pasta and cake makers alike.
