For the baker who is looking to take even more control of your baking, this class is for you. With tabletop milling in your own home, you can experiment and enhance all of your future bakes with the aromatic and nutrient-dense beauty of fresh-milled flour.
Known for its “free-form” shape and its light and airy crumb, the ciabatta loaf is the perfect sandwich companion. But what if we take this simple white slipper (‘ciabatta’ is the Italian word for slipper) into a more flavor-filled, nutrition-rich bread with the inclusion of some fresh-milled whole wheat flour?
In this class you will learn the traditional method of craft ciabatta loaves, using a preferment and yeast, with the added bonus of some flavorful fresh-milled, stone-ground whole wheat milled at the very moment of making the dough. This class will give you some initial insights and instruction on how to mill for various grain sizes, extraction levels and blends.

The Salty Dough Company is a first-generation, Italian-style kitchen specializing in pastas made from local and sustainable ingredients. Founder and sfoglina, Stephanie, blends her Italian upbringing with her passion for crafting flavorful doughs from stoneground flour and fresh produce in a collection of dried and frozen pastas. She is on a mission to educate consumers that thoughtful, small-batch, slow food is a better bite all around.

Touring our facility requires that all participants adhere to health guidelines - all touring participants (included in ticket) will be required wear a hair net that effectively restraints all hair, including mustaches, goatees, and any other facial hair. Close-toed shoes and shirts that cover the underarms and shoulders are required for entering any part of our facility, per health code. No exceptions.
In keeping with the low COVID risk level in Travis County, masks are optional and up to personal discretion for this class.
