Marquis a cross between Red Fife and Red Calcutta, developed in Canada in 1906. It accounted for 11 million acres of wheat grown in the U.S. by 1919.
This hard red wheat has a similar flavor profile to Red Fife, but milder, and makes a stronger and most extensible dough. Learn more about it in this video.
Marquis is now one of my favorite flours from Barton Springs. It imparts a delicious flavor that is still subtle. I've used about 1/3 for a pizza dough recipe and 1/2 in a cake. Turned out beautifully.
I have bought BSM Marquis flour in the past and loved it, so I bought some again recently. I love the delicious flavor it gives to my bread recipes that I have used many times. Each bite of bread made with a BSM flour just calls for another bite -- heck, a whole 'nother slice!
I just made the most perfect loaf of bread with the Marquis flour that arrived yesterday. I really missed this flour, it has such flavor and I haven’t made a bad loaf ever. The sandwich bread recipe and video are superb! I tried another brand unsuccessfully and I hope I never have to go without Marquis flour again. I intend to bake multiple loaves and freeze to get me through the year!

I have made a whole wheat bread using Marquis flour on 2 different occasions. Wonderful flavor. Great addition to my sourdough efforts!
