Join chef and culinary educator Arthur Orozco of Nutrir for a hands-on exploration of alkaline noodle making using Barton Springs Mill heritage grains.
While alkaline noodles are most commonly associated with ramen, a great bowl begins with understanding the noodle itself. Rather than focusing on all of the individual components of ramen, this class takes a deeper look at the craft, technique, and science behind transforming heritage flour into fresh alkaline noodles.
Students will work through the process from beginning to end: mixing a low-hydration alkaline dough, understanding the role of alkaline salts, resting and developing the dough, compression and lamination, sheeting to the proper thickness, and finally cutting and cooking the noodles.
We’ll explore both machine-cut and hand-cut noodles, giving students an understanding of how thickness, width, texture, and cutting method can change the final eating experience. Along the way, Arthur will discuss how working with Barton Springs Mill heritage grains differs from conventional noodle flour and how technique can be adapted to allow the character of the grain to remain part of the finished noodle.
At the end of class, we’ll bring everything together by cooking our freshly made noodles and assembling a ramen bowl designed to showcase what we spent the class learning: the noodle.
This class is perfect for anyone interested in ramen noodles, heritage grains, handmade pasta and noodles, or simply understanding more deeply how flour, water, alkalinity, pressure, time, and technique can completely transform a dough.

About your instructor, Art Orozco:
Arthur Orozco is the chef and founder of Nutrir, a culinary project centered on heritage grains, traditional food processes, and their creative expression in contemporary cooking. A graduate of the Arizona Culinary Institute, Arthur has worked in professional kitchens and continued his culinary education through hands-on work in Oaxaca, Mexico, where traditional processes and regional foodways became an important influence on his cooking.
His work with Barton Springs Mill has included teaching and collaborating on classes centered around heritage grains and traditional techniques, including nixtamalization, tamales, dumplings, and now alkaline noodles. Through Nutrir, Arthur continues to explore the intersection of ancestral process, regional ingredients, and modern craft.

Touring our facility requires that all participants adhere to health guidelines - all touring participants (included in ticket) will be required wear a hair net that effectively restraints all hair, including mustaches, goatees, and any other facial hair. Close-toed shoes and shirts that cover the underarms and shoulders are required for entering any part of our facility, per health code. No exceptions.
In keeping with the low COVID risk level in Travis County, masks are optional and up to personal discretion for this class.
