In this class you will learn to make Pumpkin Spice Trifle with Ginger Pear Compote, Salty Vanilla Pastry Cream, Creme Fraiche Whip, and Candied Pecans - the perfect fall dessert for a friends-giving, office potluck, and especially for celebrating at home.
Trifle is a traditional English layered dessert typically made with sponge cake, custard, whipped cream, and fruit. Our version plays with these basic elements and gives them a flavorful autumn twist. We will learn baking and pastry recipes that can carry over into many future desserts, like a pumpkin spice cake with Barton Springs Mill Rouge de Bourdeaux and Sonora Flours, a compote using Bartlett pears, and a classic vanilla pastry cream.
Together we will learn a variety of techniques and create a beautiful fall dessert in a take home trifle dish.

A little bit about your instructor, Savita Bhat:
I am a baker and pastry chef with a love for all things food. I have been working in the food service industry for the past 10 years, after making a career change from the corporate world. After honing my skills in New York City working in the pastry and bakery scene at places like ABC Kitchen, Breads Bakery, Simon and the Whale, I returned home to Texas to help start a worker-owned bakery cooperative in Austin. My baking is focused on real, accessible, and flavorful baked goods. I love working with the freshly milled flour from Barton Springs Mill and I’m excited to share these recipes with you all!

Touring our facility requires that all participants adhere to health guidelines - all touring participants (included in ticket) will be required wear a hair net that effectively restraints all hair, including mustaches, goatees, and any other facial hair. Close-toed shoes and shirts that cover the underarms and shoulders are required for entering any part of our facility, per health code. No exceptions.
In keeping with the low COVID risk level in Travis County, masks are optional and up to personal discretion for this class.
