This September I'll be wandering Northern France in search of truly memorable honey and to discover why Dijon—better known to most of us for mustard—has cherished honey gingerbread for centuries.
We'll compare a special French honey with three Central Texas honeys from our Summer 2026 harvest. We'll explore how landscape, weather, flowers, season, and the bees themselves shape every jar—and discover just how dramatically flavor, aroma, color, and texture can change.
Then we'll roll up our sleeves and bake a fragrant honey gingerbread while sharing the history, traditions, and tasty treats I bring home from France. From honey's extraordinary journey through the hive to gingerbread's journey across cultures and centuries, you'll discover why this humble loaf has been treasured for generations.

No baking or beekeeping experience necessary—just curiosity and an appetite.

About your instructor:
Nona is a lifelong foodie and passionate baker, avid gardener, family farmer & beekeeper. From a 30+ year in food she’s had the honor to learn from esteemed chefs and home cooks in every corner of the country. Teaching is her passion - she believes there is no better gift than sharing a recipe!
Among her many endeavors Nona’s leadership influenced the Central Market experience including the Cooking School. She spent 20+ years steeped in natural food and healthy eating while working at Whole Foods Market. And can be counted on to find a farmer’s market within 20 minutes of landing anywhere in the world! Find her at a local farmers market with her delicious honey from Texas Sassy Bees. It’s inevitable that we’ll wind up talking about bees, beekeeping & honey - the amazing creatures make our food system possible!

TICKETS ARE FINAL SALE, NON-REFUNDABLE, and NON-TRANSFERABLE TO OTHER CLASSES. You may transfer tickets to another person to attend in your place - simply have them check in under the original name used to purchase the ticket(s).
By purchasing tickets to attend one of our classes, you acknowledge that you have read and agreed to our Participant Class Policies and Media Release.
Touring our facility requires that all participants adhere to health guidelines - all touring participants (included in ticket) will be required wear a hair net that effectively restraints all hair, including mustaches, goatees, and any other facial hair. Close-toed shoes and shirts that cover the underarms and shoulders are required for entering any part of our facility, per health code. No exceptions.
In keeping with the low COVID risk level in Travis County, masks are optional and up to personal discretion for this class.
