Bread Sticks
Yield: 1 dozen, 60g each
Ingredients:
Dough:
50g BSM Stardust Whole Wheat flour
8g instant yeast
20g cane sugar
5g fine sea salt
45g olive oil
250g water (75°F)
Butter Topping:
113g unsalted butter (melted)
2g garlic powder
1g onion powder
finely grated parmesan
finely chopped parsley
flakey sea salt
Method:
In a large mixing bowl, combine the water, olive oil, sugar, and yeast. Whisk to combine. Add the flour, then the salt. Mix with your hands or a wooden spoon until it becomes a wet dough. You may also use a stand-up mixer for this dough using the hook attachment. Cover the dough and let it sit for 10 min. Oil your hands lightly, and begin to round the dough in the bowl while also pulling the dough upward, then tucking the dough under itself in a circular motion. Repeat this process 4-5 times until the dough becomes less sticky and feels more elastic. Cover the bowl of dough again, and allow to rise at room temperature at (ideally 75°F) for 1-1/2hrs or until double in volume.
Punch down the dough, and divide into 12 dough balls weighing 60g each. Be sure to moderately flour your work surface as this dough is somewhat sticky. Press each dough ball down into a small rectangular shape, then roll into a rope and firmly seal the crease using surface tension. Place each dough rope seam side down onto a parchment-lined baking sheet. Proof for 30-40 min while preheating an oven.
Preheat an oven to 400°F.
Topping:
Melt the butter, then add the seasonings, except for the grated parmesan. Whisk with a fork to incorporate.
Bake for 20 min or until just slightly golden on top. These will look somewhat light in color.
Remove the breadsticks from the oven. While the breadsticks are still very warm, brush with the butter topping and sprinkle the grated parmesan on top. Best to serve these breadsticks warm!
*You may bake and freeze after the breadsticks have cooled. These should keep in an airtight freezer bag for up to three months. Do not brush with the topping if planning to bake and freeze. To reheat, heat an oven to 400°F and place the frozen breadsticks in the oven for 10-12 mins. Brush with the topping while they are still warm. Enjoy!
