BSM has partnered with Oklahoma State University's Dr. Brett Carver and Bob Baker of 4 Generations Farm, Alva, Oklahoma, to bring you Heartwell - a modern purple wheat developed from the crossing of Big Country (a former BSM customer favorite) and Smith's Gold. The result is a wheat with purple pericarp/bran that contains at least three times the antioxidant anthocyanin found in conventional wheat, comparable with the concentrations found in blackberries. Additionally, Heartwell has a strong, rich flavor profile and aroma, with baking properties that match or exceed Butler's Gold! Barton Springs Mill was selected as the only mill to produce limited amounts of this wheat into whole wheat flour. While supplies last.

This flour is true perfection! I used Heartwell Purple Wheat 1:1 in my favorite FMF bread recipe in which I usually use 1/2 hard red wheat and 1/2 soft white wheat. Most folks rave about my usual FMF bread, so I was a bit skeptical that the Heartwell Purple Wheat flour might ruin my reputation. On the contrary! Everyone I shared the “purple bread” with LOVED it! The bread had a fantastic crumb, was a bit darker than my usual FMF bread, and the flavor was outstanding. Rich and satisfying without being dense or heavy. I cannot wait until the Heartwell Purple wheat berries are available!

I loved both the taste and look of this flour. It had a slightly purple tint and it went well with other grains in my sourdough bread.
I purchased a small bag of Heartwell Purple to give it a go. My first loaf I made with a combination of Heartwell and butlers gold 50/50. What an amazing loaf! Buttery, nutty, whole wheat goodness. Needless to say, it was devoured immediately! I have enough flour for one loaf of straight Heartwell purple. I’ll be back to review its performance and flavor stand alone.
