    From German, meaning literally “single grain,” Einkorn wheat was one of the first plants to be domesticated and cultivated. The earliest clear evidence of the domestication of Einkorn dates from 8,650 BC to 7,950 BC. Einkorn has a higher percentage of protein than modern red wheats and is considered more nutritious because it also has higher levels of fat, phosphorus, potassium, pyridoxine, and beta-carotene. It works well in hearth breads (up to 30%).

    Also known as Farro Piccolo, Einkorn is a grain derived from Grano Farro, or Farro Grain. 

    You can prepare Whole Berries as Farro. The texture is beautifully bouncy, with a slight chew once cooked. You can prepare Einkorn and other Farro grains easily, going well with a variety of meals. From soups and salads, to side dishes and hot breakfast, the possibilities are exciting.

      I am very impressed with this flour and cornmeal. I love having fresh milled, nutritious and healthier flour. You can smell and see the difference. It makes all of my recipes even better. I love supporting local businesses and farmers. Turns out that one of the farmers in our area. I love that. I will be a loyal customer now. Delicious products.

      I wanted to start baking with ancient grains and found them on the Barton Springs Mill website. I ordered Einkorn flour and am I glad I did. It was good to work with. I started with some beginner recipes of bread and cinnamon rolls. They were not difficult to make and the flavor, texture and moist is so delicious. I have made the cinnamon rolls twice now. Can't say enough good about it. Now I want to try the other ancient grains and see which one(s) I like best. Plus, this has sold me on getting a grain mill so I can mill as I need. BTW, I purchased 10 pds of the einkorn and 5 of their all purpose and I am almost out! I would like to encourage those reading to give it a try, it will really bless your family.
