Sonora is one of the oldest surviving wheat varieties anywhere in North America. Predating Red Fife and Turkey Red wheat, it is a soft white, round winter wheat with pale red grains.

While earliest records document its existence in the mountain plains of Sonora, Mexico in the early 1700s, the wheat surely predates that era by generations. It was widely planted in California by the early 1800s.

    Sonora Flour Order

    I love Barton Springs Mill flour and you have been and will continue to be my primary flour source. Unfortunately, my last order came infested with flour mites and I didn't catch it before it spread through my entire stash of baking supplies. I was low on a lot of things anyway, but I still had to throw a lot out. I've learned from my mistakes and will be inspecting and freezing future orders but this was very disappointing.

    If you're looking for buttery flavor and beautiful color in your baking Sonora is for you! I've made pancakes, crepes, biscuits and breads using this flour and have been super impressed with its performance. For long-fermenting sourdough loaves I've been incorporating half Sonora and half hard red wheat flour for improved strength. Super happy with this variety and definitely rec!
