Try this flour in our RECIPES:

Emmer is one of three ancient grains (along with einkorn and spelt) that constitute farro, first cultivated 9,600 BC in the Fertile Crescent.

The applications for this delicious and uniquely flavored grain are endless-- mix this flour with any of our hard wheat flours for flavorful, fast rising yeast breads. It adds a burst of flavor to hearth breads (up to 30%). It also makes great pasta, and whole berries can be cooked as a whole grain breakfast cereal. Additionally, Emmer is high in antioxidants and a great source of protein.

    Quality of Emmer Flour

I have been ordering Emmer Flour for quite sometime but this time I did not order on regular price but using the discount. And I find that the quality of the flour is not the same. I use this flour to make chapati, an Indian bread. In the past, the dough (made with water only) would be soft. But this time it was hard while being sticky during kneading. As a result, my chapati was hard too. The color of the dough was whiter than the past times. Definitely, something has changed with the flour. Not so happy since chapati is our staple food.

Have had wonderful results with making Indian flat bread with this flour. That it is low glycemic is a plus. I highly recommend it.
