From German, meaning literally “single grain,” Einkorn wheat was one of the first plants to be domesticated and cultivated. The earliest clear evidence of the domestication of Einkorn dates from 8,650 BC to 7,950 BC. Einkorn has a higher percentage of protein than modern red wheats and is considered more nutritious because it also has higher levels of fat, phosphorus, potassium, pyridoxine, and beta-carotene. It works well in hearth breads (up to 30%).
Also known as Farro Piccolo, Einkorn is a grain derived from Grano Farro, or Farro Grain.
You can prepare Whole Berries as Farro. The texture is beautifully bouncy, with a slight chew once cooked. You can prepare Einkorn and other Farro grains easily, going well with a variety of meals. From soups and salads, to side dishes and hot breakfast, the possibilities are exciting.
A few weeks ago I tried the BSM Test Kitchen's recipe, "Einkorn Sandwich Bread." I have been baking bread as a serious hobby for more than 50 years (I made my own sourdough starter from organic red grapes, etc., and I mostly bake sourdough) but this yeast recipe and this freshly milled flour, together, are game changers! The bread is so flavorful and tender and it remains so for as long as it lasts! If you have not made it yet, go ahead and try. A very simple recipe. It was hard for me to believe it could be so good, but it is!! May I also say that all the flours I have used from BSM are truly special. I call these "game changers" because it is VERY hard to go back to others' regular flours, even the good/special ones, once you have begun using these. The flours, the milling, the growing, their recipes, and the care they take to make sure we get freshly milled products and know when/how to use them - so grateful!! I also bake ancient grain recipes from ancient Rome's era, and it is amazing to find the flours I need to do that. Thank you!

I used this flour to make sourdough. It was delicious! It has a nutty flavor and makes a delicious, hearty bread.
Love it! I like the the weight of the grind it makes excellent bread. So far I have only tried bread, biscuits, and pancakes. But the more familiar with using it the more recipes I’ll try. For anyone wanting to have more control of what you’re feeding your family, I would tell you start with making your own bread. I really recommend Einkorn flour. Gloria
