Our custom-mixed, 'Standard' All-Purpose flour is a combination of TAM 105 (hard red winter wheat) and Crawford Red (soft red winter wheat), sifted to ‘00’ and blended for the perfect combination of flavor, structure, and tenderness in cookies, cakes, rolls and pies.

Different texture more 'bouncy'/robust while kneading. nice crumb, more nutty flavor than other whole wheat flours I've used. I weighed the flour but still didn't get 2 even batches.
