I've used this flour a few times in bread making and it's worked out very well.
Really nice flour with good flavor. This is my first time trying it, but so far, I've used it to make bread and whole wheat tortillas and it performed very well in both applications.
The first time I got Rouge de Bordeaux from Barton Springs Mills, it was amazing. The aroma was intense and it maintained that aroma after baking. A 5 star flour, without a doubt. The second bag I ordered had no aroma whatsoever and was pretty fussy to work with. I wrote to the mill to ask what was different and they said different batches/crops will just have more or less of that characteristic. Before placing my most recent order, I wrote to the mill to ask about the current crop, explaining that I had gotten two very different ones before. I didn’t want to end up with another bag of flour lacking the aroma characteristic of RdB. The mill responded with “I haven’t gotten any complaints!” in regards to this current batch. The new bag I have received is completely bland, no aroma whatsoever, and just not worth the price point. I have ordered RdB 3 times from the mill and only been happy with the product once. I can’t justify purchasing this one again.
I just used the berries to make an artisan bread and it is our favorite! Used 1/2 bread white flour and half Rouge. The taste is just remarkable.
