    Yellow

    Good, old-fashioned yellow corn. This open-pollinated corn is a staple in any kitchen. Golden yellow and bursting with the flavor of sweet corn.

      Hopi Blue

      Precursors of this strain of flint corn have been raised continuously for 800 years on the mesas of northern Arizona. Hopi Blue Corn is used by the Hopis to make ceremonial Piki Bread. It lends a bright and bold blue-purple hue when cooked or baked.

      Bloody Butcher is a deep red to burgundy colored dent corn, developed in Virginia in 1845. It lends a very muted burgundy hue when cooked or baked.

        The red (Bloody Butcher) kernel was hardly useable for Nixtamallization masa tortillas

        I have not yet tried the Hopi corn kernel yet since I was very disappointed in using the Red-Bloody Butcher corn kernel for making corn tortillas (using a tried and proven Nixtamalization recipe) THESE kernels seemed to be overly dehydrated or old or stored in a high heat storage enviornment or something like this for they did not moisten enough to be used once ground…. Other mixed color corn kernels from other providers have worked perfectly and without such an issue…

        Very tasty red and blue corn!

        I was so hungry for corn bread that I finally got motivated enough today to get off my backside and dropped some 'o them red kernels into my Komo 200 Duet and ground them into fine cornmeal. I found a good recipe online and it turned out amazing on my first try and I can't stop sampling now. The fine ground produces a more cake like texture. I plan to experiment with a coarser ground and add in some Polenta as well. The red kernels have a nice nutty flavor!
