Some Unexpected variation in Color and Texture

We ordered 2 one pound bags of the yellow corn grits. One of the two bags was very yellow, the other had a noticeable reddish-brown color to it. We made the reddish brown first, and even rinsed there was a notable, well, grit to it. Like the corn seed shell hadn't all been sifted out. The feel of the extra roughage, rather than the taste was a little off-putting. It was less noticeable with the leftovers that we molded into polenta and fried in bacon grease. We wonder if the bag had not been processed properly post-grinding, or if it's a normal variation.

We have not tried the yellow bag to see if there's a difference in how they were processed, but the first bag had about the same taste as the bulk grits we can't find at the store (normally Whole Foods) now. The jury is still out, but when the bulk service comes back, that will likely still be our go-to.

Great for hot cross buns

I bought TAM 105 to make hot cross buns. The enriched dough rose very well - first rising for about 3 hours, kneaded in mixed peel and diced apple for the second rise, formed the buns and let rise a third time. They are beautifully soft, tender and delicious.
