    Sonora is one of the oldest surviving wheat varieties anywhere in North America. Predating Red Fife and Turkey Red wheat, it is a soft white, round winter wheat with pale red grains.

    While earliest records document its existence in the mountain plains of Sonora, Mexico in the early 1700s, the wheat surely predates that era by generations. It was widely planted in California by the early 1800s.

      Amazing flour and bread

      I first heard of Sonora from The Perfect Loaf website and was instantly curious to get my hands on it! I could not believe my taste buds when I finally made a loaf with it, I fell in love with it and I am hooked and pumped to bake more bread with it and it's sweet flavor. I was at first confused since I used it with rye and modern wheat to make a bread that came out amazing and sweet

      Great start into milling; I’ll try something different next time, I read these may be better for pastries, etc., while the hard berries better for breads.
