A favorite of West Coast artisan sourdough bakers, like Tartine, Yecora Rojo was developed by the International Maize & Wheat Improvement Center in Cooperation with the Mexican ministry of Agriculture in Mexico. It was first received in California in 1970.
I really love this flour. I’ve been using it mixed with bread flour, and I think it’s the best combination. The texture and flavor are amazing, both for bread and pizza. I haven’t tried it on its own yet, but I’m very happy with the results so far. I would definitely buy it again because it’s ideal for baking.
I've always made bread and I am so happy I discovered this flour. I use it in my favorite recipe for mixed grain loaf with sunflower seeds. It is earthy and rich. I mix it with all purpose flour.
